What Is Mud Cake
If you are looking for a chocolate fix, this cake seems to be your best bet! When it comes to the national beverage of the United States, this kind of cake is excellent with a cup of coffee!
Ingredients
• 1 Tbsp of freshly squeezed lemon juice per serving
• 1-cup Meadow Pure Original Milk (250ml)
• Dark chocolate, around 250 g, roughly shredded
• Coffee, one mug (strong instant or hot) (250ml)
• 12 cups of olive or canola oil (125ml)
• Edmonds Grade Standard Flour, 2 cups (300g)
• One tablespoon of Chelsea Dark Sugar and Chelsea Crude Sugar (200g)
• Two teaspoons of vanilla extract (40g)
Chocolate Mud Cake Recipe
• Heat-resistant dish: Combine chopped chocolate with cubed butter in this big heatproof bowl. In a microwave-safe bowl, combine butter and chocolate and heat until smooth. If you don't have a microwave, heat the chocolate in quick spurts and stir often.
• Add sugars & instant coffee granules to the mixture. Add the eggs and mix thoroughly. Keep the yolks at room temperature to avoid a split or curdled batter.
• Sift the dry ingredients through a sieve to remove any lumps. Using a sifter can help you get a well-mixed batter every time. A separate bowl may be used to sift the ingredients, and then they can be added one at a time to the batter.
• Stir thoroughly, and you're done in a jiffy. You may now bake your batter. Don't be alarmed if you see a lump or a gritty surface.
• Slow and low heat is used for baking the cake. The cooking time might vary by up to 15 minutes, so always check your cake with a skewer inserted in the centre to ensure it's done. When the cake is made baking when the skewer inserted into the middle of the cake comes out essentially clean or with only a few moist crumbs attached.
• Use a big serrated kitchen knife or a cake levelling tool to level the cake's top. Mud cakes tend to sink somewhat in the centre due to their thick texture.
Frosting Method
Separate the layers of cake and set them aside. In a bowl, add the cream. Heat the cream in a saucepan over low heat, stirring until hot. The chocolate may be added at this point if you choose. Ten minutes is a good starting point.
Stir constantly until a smooth, lump-free ganache is achieved. Use it to frost and fill the three layers, and you are done. Keep the icing in the refrigerator for a few hours to allow it to solidify. The best way to serve this dish is either cold or at room temperature.
The mud cake may be stored airtight for up to seven days without refrigeration. However, if you keep it in the fridge, it will last for a few more days.
Conclusion
Finally, this mud cake freezes beautifully. It will not have that "frozen" flavour or lose some of its qualities if you freeze it. It is also convenient since you can prepare it ahead of time and freeze it for later use.
