Trendy Little Gem Cakes
• Before baking, you may create cake gems pop filling by adding blue food coloring to a yellow cake box mix mixture. Once the cake is cooked and cooled, crumble until there are no major lumps, and then mix in enough store-bought frosting (a few scoopfuls) so that it stays together when pressed in your palm. After that, chill the mixture in the fridge until you're ready to go on to the next stage.
• Create two microwave-safe dishes and divide the white candy coating between them. Heat the bowls on half power, stirring every 30 seconds or so, until the candy-coating discs are melted. Now, whisk in more discs of various colors until you get the desired hue. Heat it and mix it up if the coating becomes too thick to stir easily.
• Fill each well of the chocolate mold with a heaping 1/4 teaspoon of the hot pink sanding sugar. Then, add some melted pink coating, about a tablespoon's worth. To prevent the sugar from settling in one location, use a toothpick to mix the coating and sugar. Then, turn the mold at an angle to create an irregular covering. The coating should not extend beyond the perimeter of the mold.
• One way to check whether the sugar has been evenly distributed is to invert the mold and examine the bottom. After mixing, put the mold in the fridge for 5 minutes to solidify.
• Take the mold out of the fridge and proceed with the same procedure using the aqua-melted coating. With this coating, you'll want to use the back of a tiny spoon to ensure even distribution throughout the whole mold. Put the mold back in the fridge for another 5 minutes or until firm.
• Take the mold out of the refrigerator and fill it with cake filling, leaving a little space at the top so it can be sealed properly.
• Add another layer of melted coating on top, then use a spatula to distribute it and seal the back. There may be some lumps and bumps, but that's OK.
• The next time, put the form in the freezer for about 15 minutes or until extremely solid, and then flip the gems out of the cast.
